Classic Coleslaw: A British recipe for a classic coleslaw (slaw) of carrot, cabbage and onion in a mustard mayonnaise base.
Ingredients:
1/4 white cabbage, cored and very finely shredded
1/4 red cabbage, cored and very finely shredded
1/2 sweet onion, peeled and finely shredded
2 medium carrots, peeled and finely shredded
salt, to taste
6 tbsp mayonnaise
2 tsp grain mustard
1 tbsp soured cream or crème fraîche
1 tsp flat-leaf parsley, finely chopped
1 tsp lemon juice
Method:
Combine the finely shredded vegetables in a bowl, scatter a little salt over then and toss to combine. Turn into a colander and sit over a bowl. Set aside for 1 hour to drain. Discard any liquid in the bowl then squeeze the vegetables dry and place in a clean bowl.
In a small bowl, beat together the mayonnaise, mustard and soured cream. Add the parsley and lemon juice and beat to combine. Add this dressing to the vegetables and toss to combine.
For best results, make this as close to serving time as you can. This way the vegetables remain crisp and fresh.
