This is a classic Jewish recipe from Poland for dessert pancakes made from Matzo (also known as Matzoh) meal and ground almonds cooked with wine and made into a batter with eggs.

Ingredients:

100g Matzo meal (finely-ground matzoh bread)
50g blanched almonds
200ml white wine
50g sugar
4 eggs, separated
pinch of salt
pinch of baking powder
a few drops of almond extract

Method:

Grind the matzo and almonds finely in a coffee grinder. Place in a pan along with all but 3 tbsp of the sugar then pour over the wine. Heat until warmed through then take off the fire.

In the meantime, beat the egg yolks with the reserved sugar in a bowl until pale and creamy. In a separate, clean and dry bowl, beat the egg whites with a pinch of salt until stiff. Pour the matzo mixture into the egg yolks, beating thoroughly until combined. Add the almond extract and baking powder and beat to combine.

Fold in the egg whites and mix gently (but do not over mix). Heat a little oil in a pan and when hot fry small pancakes made from the batter on both sides until golden brown. Sprinkle with finely ground sugar just before serving.
