Chorba Frik (Green Wheat Soup)

This is a traditional Tunisian soup that's typically served during Ramadan to break the day's fast.

Ingredients:

120g frik (crushed green wheat)
pinch of freshly-ground black pepper
pinch of ground cinnamon
1 tsp paprika
1/2 red bell pepper, finely diced
2 tbsp olive oil
1 tbsp smen (or ghee)
1 onion
50g chickpeas
1 tbsp tomato purée
500g tomatoes, blanched, peeled and chopped
250g lamb, cubed
1 celery stick, finely chopped
1 bunch of coriander, chopped
salt, to taste
3 tbsp shredded coriander, to garnish
1 tsp dried mint, to garnish

Method:

The night before, wash and pick over the chickpeas. Place in a bowl, cover with plenty of water and set aside over night to soak

The following day, melt the ghee in the base of a flame-proof casserole dish or tagine. Add the lamb and onion and fry until browned then stir in the chopped coriander and season with salt, black pepper and paprika. Now add the bell pepper and 120ml water. Bring to a simmer and cook for 5 minutes.

At this point stir in the tomato purée and add the tomatoes. Add 1l of water then drain and stir in the chickpeas along with the celery. Bring to a simmer and add a lid. Cook gently for about 30 minutes then stir in the crushed green wheat and bring back to a simmer.

Add the lid once more and cook for 20 minutes more, or until the wheat and the meat are both tender. Turn into a warmed tureen, garnish with coriander and mint and serve immediately.
