Chili with Beans is a traditional American recipe for a stew of beans with tomatoes and chillies that can be served as a vegetarian meal or used as an accompaniment to pasta or even as a pizza topping. Ingredients:
1/2 tsp olive oil
1 large onion, chopped
800g (2 tins) red kidney beans (or pinto beans), drained
400g (1 tin) chopped tomatoes
120ml tomato purée
60ml (about) water
1 tbsp golden syrup (corn syrup)
1/2 tsp oregano
generous pinch of paprika
1 cayenne chilli, finely chopped
2 tsp hot chilli powder (or to taste)
Method:
Heat the oil in a pan then add the onion and cayenne chilli and cook on medium heat (for about 6 minutes) until softened. Add the kidney beans and tomatoes then stir-in all the remaining ingredients. Bring the mixture just to the boil then reduce to a simmer and cook, uncovered, for 20 minutes, stirring occasionally.
This can be served as a vegetarian dish with rice or can be used as a pizza topping or as the basis for a casserole.
