Ceviche de Pollo (Chicken Ceviche) a Classic Peruvian recipe for a dish of chicken pieces fried with yellow bell pepper and onions that's finished with lemon juice and served with boiled potatoes.
Ingredients:
750g chicken pieces
100g yellow bell pepper, diced
750g potatoes, boiled until tender
500g onions
juice of 500g lemons
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Heat a little oil in a pot, add the bell pepper and fry for about 5 minutes, or until browned.
Cut the chicken meat into pieces and season with salt and black pepper. Add to the pan and cook for about 15 minutes, or until almost done.
Chop the onions and add to the pot. Cook for 4 minutes more then add the juice of the lemons. Bring to a simmer and cook for 5 minutes more.
