Ingredients:

1kg goat meat, cut into chunks
2 tbsp curry powder
1 onion, chopped
3 garlic cloves, minced
3cm piece of ginger, grated
2 tomatoes, chopped
2 carrots, chopped
2 Scotch bonnet chillies, chopped
2 sprigs thyme
500ml coconut milk
Salt and freshly-ground black pepper, to taste
2 tbsp vegetable oil

Method:

Season the goat meat with the curry powder, salt, and pepper.

Place a large pot over medium heat and when hot add the oil. Add the seasoned goat meat and fry until browned on all sides.

Add the onion, garlic, and ginger to the pan and fry until fragrant. At this point stir in the tomatoes, scotch bonnet chillies, and thyme. Cook for 5 minutes.

Pour in the coconut milk, stir in the carrots and bring everything to a simmer. Cover the pot and cook for 1.5 to 2 hours, or until the goat meat is tender.

Adjust the seasoning to taste with salt and pepper.

Serve the Curry Goat accompanied by rice or roti skins.
