Cauli-matar Ko Tarakari

Cauli-matar Ko Tarakari is a traditional Nepalese recipe for a classic starter of cauliflowers and potatoes in a tomato-based sauce with peas, onion and coriander (cilantro) flavoured with garam masala. Ingredients:

1 head cauliflower
300g frozen peas, thawed
1 potato
2 tbsp ginger, grated
2 garlic cloves, finely chopped
1 small red bell pepper, finely chopped
2 tsp Garam masala
1/2 tsp turmeric
1 large tomato, diced
80g coriander (cilantro), chopped
1 small red onion, finely diced

Method:

Cut the cauliflower into florets then peel and dice the potatoes. Add the potatoes to a steamer and cook for 10 minutes then add the cauliflower and steam for 10 minutes more, until both the cauliflower and potatoes are almost tender.

Meanwhile, add 2 tbsp oil to a pan and use to fry the onion until soft (about 6 minutes). Add the cooked potato and cauliflower to the pan then stir-in the turmeric. Fry for 1 minute then add the salt, garam masala, garlic and ginger. Fry for 2 minutes then cover the pan and cook for 10 minutes then stir-in the peas and bell pepper. Cook for 2 minutes more then add the tomatoes and coriander.

Stir to combine then transfer to a serving bowl and serve.
