Carrot, Orange and Cumin Dip

Here is another North African inspired dip that makes an excellent and different dish for a New Year party.

Ingredients:

500g carrots, scraped and chopped
2 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, chopped
1 tsp ground cumin
75ml orange juice
salt and freshly-ground black pepper, to taste

'Roof Tile' crackers, to accompany

Method:

Place the carrots in a steamer basket and steam for about 18 minutes, or until tender.

In the meantime, heat the olive oil in a frying pan and use to gently fry the onion, garlic and cumin for about 5 minutes, or until the onion is soft.

Turn into a food processor then add the carrots along with the orange juice and seasonings. Blend all the ingredients together until smooth.

Taste and adjust the seasonings then set aside to cool.

Serve at room temperature, accompanied by roof tile crackers.

If stored in an air-tight jar it will keep in the refrigerator for up to 2 days.
