This a fantastically-flavoured truly vegetarian soup that's very easy to make.

Ingredients:

450g carrots, peeled and sliced
1 onion, thinly sliced
1 medium potato, peeled and thinly sliced
1 tsp ground coriander
1 garlic clove, finely chopped
1.2l vegetable stock
large bunch fresh coriander, finely chopped
1 tbsp vegetable oil
salt and freshly-ground black pepper to taste

Method:

Heat the oil in a large pan and add the onions, carrots, potatoes and garlic. Cook for about 4 minutes until the onions begin to soften. Add the coriander seeds, season and cook for a minute.

Now add the vegetable stock and bring to the boil. Simmer until all the vegetables are tender then transfer to a liquidiser and blend until smooth. Return the liquidized soup to a clean pan, stir-in the finely-chopped coriander and serve immediately.
