This is a classic Mozambican dish that is typically made with chicken (as here) but which can also be made with prawns or goat meat.

Ingredients:

1 whole chicken, jointed into serving-sized pieces
600g raw peanuts
2 tomatoes, chopped
2 onions, chopped
2l water
salt, to taste

Method:

Place the peanuts in a food processor and grind to a flour. Mix the flour with the 2l water to produce peanut milk.

Turn into a saucepan and bring to a boil, stirring constantly. As soon as the mixture comes to a boil add the tomatoes and onions along with the chicken pieces. Season to taste with salt then reduce to a gentle simmer, cover and cook gently for 60 minutes, or until the chicken pieces are tender (alternatively, transfer to an oven pre-heated to 180°C and bake).

Serve hot, accompanied by boiled rice or shima.
