Caribbean-style Fish Kebabs is a modern Fusion recipe for a classic barbecue dish of swordfish steak pieces in a lime, garlic, paprika and oil marinade that are threaded onto skewers with onions and tomatoes before being cooked on a barbecue. Ingredients:
1kg swordfish steaks
3 tbsp olive oil
3 tbsp lime juice
1 garlic clove, finely chopped
1 tsp paprika
salt and freshly-ground black pepper, to taste
3 onions, cut into wedges
6 tomatoes, cut into wedges
Method:
Cut the fish into 3cm cubes and place in a shallow, non-reactive dish. Whisk together the oil, lime juice, garlic and paprika in a jug then season to taste with salt and black pepper.
Pour over the fish, turning the meat to coat evenly. Cover with clingfilm (plastic wrap) and set aside to marinate in the refrigerator for 1 hour.
After this time, thread the fish cubes onto skewers, alternating with onion wedges and tomato wedges. If using wooden skewers, ensure that these are soaked in a bowl of water for at least 30 minutes before use.
Cook the kebabs on a barbecue over medium-hot coals for between 8 and 10 minutes. During this time, turn the kebabs frequently and brush with the left-over marinade as you do so.
