Ingredients:

2 medium onions, sliced
1 bell pepper, chopped
2 garlic cloves, minced
1/2 tsp thyme leaves
1/4 tsp salt
250ml tinned crushed tomatoes (or substitute fresh)
1 tbsp tomato purée
2 tbsp vegetable oil
1 tbsp vinegar
hot chillies (typically scotch bonnet) about 1 or 2

Method:

Combine all ingredients in a saucepan and simmer for about 20 minutes or until onions and bell pepper are tender.

Serve over fish and fungi or use as a dipping sauce.
