Bruine Bonen is a Surinamese Kidney Bean Stew (the name literally means ‘brown beans’). This Red Bean Stew is a delicious and simple stew with smoked sausage, creating an easy one pot meal. This simple local dish of Suriname just screams comfort food. All you need is rice to accompany and dinner is served. Whilst Pom is the National Dish of Suriname, Bruine Bonen must come a close second as a dish that screams comfort food in the heart of every Surinamer.
Ingredients:
800g (2 cans) red kidney beans (though traditionally it's made with brown beans, hence the name)
1 sausage, sliced (typically
Fachong (sweet Suranimese sausage))
3 medium tomatoes, chopped
1 onion, finely chopped
2 garlic cloves, finely chopped
3 chicken bouillon cubes
1 Scotch Bonnet chilli
4 celery sticks, chopped
Freshly-ground black pepper, to taste
3 tbsp oil
Method:
Heat the oil in a large pot and fry the sausage. Add the onion and garlic and continue to fry until soft and translucent (about 5 minutes).
Now stir in the tomatoes and beans (along with any liquid from the tin). Bring the ingredients to a boil then crumble in the bouillon cubes before adding the chilli and celery. Reduce the heat to a simmer and cook for about 10-15 minutes, until all flavours are well blended and everything is tender.
Serve accompanied with white rice and
