Brodet na Dalmatinski Nacin (Fish, Dalmatian Style)
Brodet na Dalmatinski Nacin (Fish, Dalmatian Style) is a traditional Serbian recipe for a classic dish of fish steaks (carp or scrod) of fried fish that are finished in a tomato, onion and white wine sauce flavoured with Tabasco chillies. Ingredients:
1 carp (about 1.5kg) or a scrod cut into eight 180g steaks each 3cm thick
plain flour
4 tbsp butter
2 tbsp vegetable oil
450g onions, peeled and thinly sliced
450g tomatoes, blanched, peeled, de-seeded and chopped
120ml dry white wine
1 tbsp vinegar
1 tsp Tabasco peppers, chopped
1/4 tsp white pepper
sea salt
Method:
Liberally salt the fish steaks on both sides, dip in the flour and shake off the excess. Melt 2 tbsp of the butter and 1 tbsp oil in a 30cm diameter frying pan or skillet. When the foam from the butter subsides add the fish and cook for about 2 1/2 minutes per side, or until lightly browned. Remove with a fish slice to a plate to keep warm.
Heat the remaining butter and oil in the pan then add the onions and cook for about 4 minutes, or until just soft and translucent. Stir in the tomatoes, wine, vinegar, tabasco chillies and white pepper. Bring the mixture to a boil and stir to combine. Return the fish to the pan and simmer, tightly covered for about 12 minutes.
To serve, arrange the fish steaks on a plate, pour the sauce over the top and take to the table.
