Brochettes à la Normande (Normandy Brochettes) a Classic French recipe for a barbecue dish of marinated pork fillet cooked on skewers with apple wedges.

Ingredients:

500g pork fillet
300ml dry cider
1 tbsp fresh sage, finely chopped
6 black peppercorns, crushed
2 tart eating apples
1 tbsp sunflower oil

Method:

Cut the pork into 3cm cubes then arrange in a shallow, non-reactive, dish. Mix together the cider, sage and peppercorns in a jug then pour the mixture over the pork and until well coated. Cover with clingfilm (plastic wrap) and set aside in the refrigerator to marinate for about 90 minutes.

Drain the pork (reserve the marinade) the core the apples and cut into wedges. Dip the apple wedges into the reserved marinade then thread onto metal skewers, alternating with the cubes of pork. Stir the sunflower oil into the remaining marinade.

Place the brochettes onto a barbecue over medium-hot coals and cook, turning frequently and brushing with the left-over marinade for between 12 and 15 minutes.

Transfer the cooked brochettes to a large serving plate. Serve immediately.
