The sausage galette is a Breton recipe made from buckwheat pancakes and pork sausage. It has been consumed since the 19th century, particularly during sporting events or popular festivals. This is a fast food meal that is very simple to make, quick to cook and inexpensive. It can be accompanied by a glass of cider, for a typical Brittany dish!

Method:

Cook the sausages in the oven, in a frying pan, or, even better, on a barbecue.

Before the sausages have finished cooking, heat a non-stick pan over medium heat. add a pat of salted butter and place a buckwheat pancake in to heat for a few minutes.

When the pancake is hot and the sausage is cooked, place the sausage on one edge of the pancake then roll the sausage in it.

Repeat the operation until there are no more patties and sausages. If you wish you can smear a little mustard over the pancake before adding the sausage and rolling it up.
