Breaded Chicken of the Woods with Wild Garlic and Walnut Mayonnaise

Ingredients:
1 batch wild garlic and walnut mayonnaise
300g chicken of the woods, washed and cut into strips
60g plain flour, seasoned with salt, black pepper and paprika
2 egg whites, beaten
250g fresh breadcrumbs
groundnut oil, for frying
Dust the chicken of the woods pieces with flour then dip in the egg whites to coat before completely coating in breadcrumbs. Add oil to a depth of about 5mm in a frying pan ad when hot add the chicken of the woods pieces. Fry for a few minutes, until golden brown on one side then turn over and fry on the other side. Transfer to kitchen paper to drain and serve warm with the wild garlic and walnut mayonnaise.
