Bonito con Cebolla y Tomate (Bonito with Onion and Tomato Sauce): A Spanish recipe for a dish of bonito steak cooked in a clay cazuela in an onion, crushed tomato and white wine sauce.

Ingredients


1 bonito steak (about 600g)
1 large onion, very finely chopped
750g crushed tomatoes (from tins)
3 tbsp olive oil
1 tsp plain flour
200ml dry white wine
2 bayleaves

Method:

Cut the bonito steak into chunks.

Heat the oil in a clay cazuela, or a deep cast iron skillet. Add the onion and fry for about 4 minutes, or until soft. Scatter over the flour and stir to combine then whisk in the white wine, working until smooth.

Add the tomatoes and bayleaves, cover and simmer for 15 minutes, or until the tomatoes have broken down to a sauce.

Add the fish pieces and cook for 10 minutes over low heat, or until the fish is just cooked through.

Discard the bayleaves and serve immediately.
