Boli is a very simple Nigerian dish. Basically just oven-roasted plantains. But for all that it's extremely tasty.
Ingredients:
1 large ripe plantain per person
salt and black pepper, to taste
Method:
Peel the plantains, oil them lightly and season with salt and black pepper. Place on a baking tray and insert into an oven pre-heated to 170°C (325°F/Gas Mark 3). Continue cooking until the plantains are fragrant and have browned as much as you like.
