Blitz Kuchen (Lightning Cake) is a traditional German recipe for a classic sponge cake that incorporates beaten egg whites (like a torte) which is topped with chopped nuts and cinnamon prior to baking. Combine the butter and sugar, creaming together, before adding the egg yolks. Then add all the remaining ingredients except the egg whites. Mix to a batter then add the beaten egg whites. Place in a greased, shallow pan. Dot with butter then decorate by sprinkling with sugar, cinnamon and chopped nuts. Bake in moderate oven, 180°C (350°F/Gas Mark 4), until done (about 40 minutes). Don't bake this cake too quickly, otherwise the nuts will sink to bottom.
