Ingredients:
450g uncooked black beans
1.3l hot water
2 cloves garlic, finely chopped
1 serrano chilli, de-seeded and finely diced
1 sprig epazote, finely chopped
1/2 onion, diced
1 tsp cumin seeds
salt to taste
Method:
Rinse the beans in cold water then place in the bottom of a large pot and add the hot water. Bring to the boil then reduce to a low simmer and cover.
Cook for about two hours, until the beans become quite soft. Add the remaining ingredients at this point and simmer for a further hour (or until the beans are soft).
Serve the beans as an accompaniment to a main dish.
