Bistecca di San Marino (Steak San Marino) is a traditional Sammarinese (from San Marino) recipe for a classic dish of beef steaks, coated in seasoned salt that are fried and finished by baking in a tomato, red wine, vegetable and hot pepper sauce. Ingredients:

1kg topside of beef steaks
100g plain flour
1 tsp salt
1 tsp freshly-ground black pepper
440g tinned, chopped, tomatoes
100ml red wine
1 medium onion, chopped into chunks
4 carrots, scraped and cut into chunks
2 celery sticks cut into chunks
1 tsp Italian seasoning
1 bayleaf, torn
1 tsp hot pepper sauce
olive oil

Method:

Cut the steak into four serving pieces. Combine the flour, salt and black pepper on a plate and use to coat the beef.

Pour just enough olive oil into a baking pan to cover the base then place the steaks in the base. Mix together the tomatoes, wine, carrots, onion, celery, Italian seasoning, bayleaf and hot pepper sauce in a bowl. Toss to combine then pour over the steaks.

Cover with foil then transfer to an oven pre-heated to 150°C and cook slowly for about 4 hours, or until the meat is done and very tender. Once cooked, discard the bayleaf then remove the steaks to serving plates. Serve accompanied by rice and pour the sauce over the rice. Accompany with a side salad or any cooked green vegetable.
