Bistec de Higado (Beef Liver Steaks) a Classic Ecuadorian recipe for a dish of liver marinated with lemon juice, spread with a spice mix that's fried with onion, bell pepper and tomato and served with rice.
Ingredients:
500g beef liver
1 onion, sliced into thin strips
1 large bell pepper, sliced into strips
1 large tomato, sliced into strips
1 tsp garlic, mashed
1 tsp mixed herbs
salt and ground cumin seeds, to taste
oil for frying
Method:
Wash the liver with lemon juice and salt then rinse and marinate for 10 minutes, covered, in a mix of milk and flour.
Drain the liver then mix the garlic with salt and ground cumin. Spread this mixture over the liver.
Heat oil in a pan, add the liver and fry until coloured on both sides. Reduce the heat, add the remaining ingredients, cover the pan and cook for 10 minutes.
Uncover the pan and cook gently for 5 minutes more. Serve hot, accompanied by rice.
