Bihun Goreng (Fried Glass Noodles)

Ingredients:

250g minced (ground chicken)
6 tbsp olive oil, divided
3 eggs, beaten
1 packet of mung bean noodle, soften in lukewarm water, drain, coat with 3-4 tbsp sweet soy sauce
1 medium onion
3 garlic cloves
mixed vegetables (eg diced carrots, peas, corn, mushroom)
4 drops soy sauce
4 drops sesame oil
2 spring onions, sliced into thin rounds
4 tbsp flat-leaf parsley, chopped

Method:

Heat 2 tbsp olive oil in a frying pan, add the chicken and fry until browned and cooked through. Transfer to a plate and set aside.

Add 2 tbsp more oil to the pan and use to scramble the eggs. Once cooked, transfer to a plate and set aside.

Chop the onion, combine in a food processor with the garlic and process to a paste.

Add the remaining oil to a pan and use to fry the onion and garlic paste. Add in the vegetables and all the remaining ingredients and season to taste with salt and black pepper. Stir fry until everything is heated through then add 3-4 drops of soy sauce and sesame oil.

Just before taking off from heat, stir in sliced/chopped spring onion and flat-leaf parsley.

This is often served to accompany nasi kuning as part of a larger meal.
