Bethmaennchen (German Marzipan Christmas Biscuits): A German recipe for a Christmas biscuit (cookie) made from a marzipan (almond paste) and egg base.

Ingredients:

75g almond halves
120 blanched almond halves (for decoration)
150g prepared marzipan
1 tbsp rose water
7 tbsp icing sugar
2 small eggs
3 1/2 tbsp plain flour

Method:

Finely grind the 75g almond halves in a food processor to yield almond meal.

Break the marzipan into small pieces and place in a bowl. Crack in one of the eggs then add the rosewater, icing sugar, ground almonds and flour. Mix these ingredients together to form a dough.

Shape this dough into balls the size of walnuts. Arrange three almond halves around the sides of the dough.

Brush each completed bethmaennchen with beaten egg yolk then sit on a greased baking tray. Transfer to the centre of an oven pre-heated to 170°C and bake for about 15 minutes, or until golden brown.

Remove from the oven and set aside to cool completely before storing or serving.
