Beef Teriyaki Skewers: Classic British recipe for beef, spring onion and bell pepper skewers marinated in teriyaki sauce before cooking on a barbecue.

Ingredients:

500g very thin beef steaks
8 spring onions, trimmed and sliced into short lengths
1 yellow bell pepper, de-seeded and cut into squares

For the Sauce:
1 tbsp cornflour (cornstarch)
2 tbsp dry sherry
2 tbsp white wine vinegar
3 tbsp soy sauce
1 tbsp dark muscovado sugar
1 garlic clove, crushed
1/2 tsp ground cinnamon
1/2 tsp ground ginger

Method:

Place the meat in a shallow, non-reactive, dish. Whisk the cornflour with the dry sherry to form a smooth slurry then work in all the remaining sauce ingredients. Pour the sauce over the meat, turn to coat evenly then cover and set aside in the refrigerator to marinate for at least 24 hours.

When ready to cook, remove the meat from the marinade and set aside. Pour any left-over marinade into a small saucepan.

Cut the meat into thin strips and thread these, concertina-fashion, onto wooden or bamboo skewers (soak these in a bowl of water for 20 minutes beforehand), alternating each beef strip with pieces of bell pepper and spring onion.

Put the sauce on the hob and heat gently, stirring occasionally, until just simmering. In the meantime, barbecue the kebabs over hot coals for between 5 and 8 minutes, turning the meat frequently and basting occasionally with the hot marinade.

When cooked, arrange the skewers on warmed plates and pour over the remaining sauce. Serve accompanied by a green salad.
