Barazek (Syrian Sesame Biscuits)

Barazek (Syrian Sesame Biscuits) is a traditional Syrian recipe (from Damascus) for a classic biscuit (cookie) of a butter dough where one side is coated in sesame seeds before baking. Ingredients:

375g flour
200g sugar
300g butter, at room temperature
Pinch of salt
200g sesame seeds

Method:

Preheat your oven to 180C.

Knead together the butter, flour and sugar with your hands until you get a soft dough.

Cut the dough into small walnut-sized pieces, then flatten to form a 5cm round biscuit.

Spread the sesame seeds on a large tray. Dip one side of the biscuits into sesame seeds to coat.

Arrange barazek on a baking tray with the sesame coated side uppermost.

Transfer to your pre-heated oven and bake for 15 minutes or until golden brown.

Remove from the oven, cool for 10 minutes on the baking tray then transfer to a wire rack to cool completely before serving.
