Banana Porridge is a traditional Jamaican recipe for a classic breakfast dish of mixed green bananas or plantains with flour cooked as a porridge and flavoured with spices, salt and sugar. The full recipe is presented here and I hope you enjoy this classic Jamaican version of: Banana Porridge.

Ingredients:
3 green bananas or green plantains
60ml coconut cream
120ml condensed milk (sweetened)
35g flour
4 tbsp sugar
1.2l water
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/2 tsp vanilla extract
pinch of salt
Method:
Wash the bananas or plantains, remove the ends then make a slit along the whole length. Use this to peel the fruit. Chop into small pieces then place in a blender (or a pestle and mortar) add the flour and render to a smooth paste. Add 120ml water and process until completely smooth.
Meanwhile, bring the remaining water to a boil in a large pan then slowly add the banana mixture to the boiling water, whisking or stirring all the while. Once incorporated stir constantly with a fork for abut 3 minutes to remove any lumps (if they do form).
Allow the porridge to simmer gently for about 15 minutes to thicken then stir-in the coconut cream and condensed milk and flavour with the spices and salt before sweeten to taste.
