Ingredients:
4 gurnet (gurnard), cleaned, scaled and washed
1 medium onion, thinly sliced
250ml white wine
1 tomato, blanched, peeled and thinly sliced
1 small lemon, thinly sliced and pips removed
2 tbsp butter
salt and freshly-ground black pepper, to taste
Method:
Snip off the gurnard's fins and remove the heads. Score the flesh deeply a few times then arrange the fish in a deep baking dish. Season the fish with salt and black pepper then arrange the slices of onion, tomato and lemon over the fish. Season once more with salt and black pepper then dot the butter over the top.
Pour over 250ml white wine, cover loosely with a sheet of kitchen foil then transfer to an oven pre-heated to 200°C and bake for 30 minutes.
