Baked Potato Towers: An Irish recipe for an accompaniment of baked potato flesh blended with onion and butter that's packed into moulds and baked before serving.

Ingredients:

675g baking potatoes
20g butter
1 onion, finely chopped
1 1/2 tbsp fresh chives, finely chopped
salt and freshly-ground black pepper, to taste

Method:

Scrub the potatoes clean and pat dry then prick all over with a fork. Set in an oven pre-heated to 200°C and bake for about 40 minutes, or until slightly softened but not completely cooked through. Remove from the oven at this point and set aside to cool until they can be comfortably handled. At this time, peel the potatoes and grate them coarsely.

Melt the butter in a pan and use to fry the onion until soft but not coloured (about 4 minutes). Gently mix the onion with the potatoes, chives and seasonings. Spoon the mixture into eight mounds on a greased baking tray then return to the oven and bake for a further 40 minutes, or until the potato is cooked through, piping hot and lightly golden brown all over.

Serve immediately.
