Baked Lamb with Potatoes and Artichokes: An Irish recipe for a roast of lamb and waxy potatoes flavoured with rosemary and finished with tinned artichokes.

Ingredients:

1.1kg waxy potatoes, sliced thickly
1.25kg lean lamb, cut into medium-sized pieces
1 onion, sliced
1 sprig of fresh rosemary, broken into 4 pieces
5 tbsp olive oil
450g tinned artichokes (the kind preserved in oil) or a tin of artichoke hearts
salt and freshly-ground black pepper, to taste

Method:

Combine the potatoes, onion, rosemary, oil and seasoning in a large baking tin. Use your hands to gently but throughly mix the ingredients together then transfer to an oven pre-heated to 200°C and bake for 45 minutes.

After this time stir the contents of the baking tin to ensure that the potatoes and the lamb brown evenly then return to the oven and cook for 30 minutes more.

Drain the artichokes and cut in half. Stir them into the potato mixture and bake for a further 15 minutes.

Serve hot.
