Bacalao à la Gallega (Galician-style Salt Cod): A Spanish recipe for a potato and onion slices topped with boiled salt cod and finished with a garlic and cayenne pepper sauce.
Ingredients
1kg salt cod, desalted
750g potatoes, peele and sliced
1/2 onion, peeled and sliced
3 garlic cloves
5 tbsp olive oil
1 tsp cayenne pepper
Method:
Combine the potatoes and onion in a pot. Pour over enough water to cover them by a depth of 1.5cm. Bring to a simmer and cook for 5 minutes then add the cod. Cover and continue cooking over medium heat for about 18 minutes, or until the potatoes are tender.
In the meantime, pour the oil into a pan and when hot add the sliced garlic. Fry until the garlic begin to brown then take off the heat and stir in 1 tsp paprika, followed by 200ml of the cooking liquid from the cod.
Arrange the potatoes and onions on a warmed serving dish and sit the pieces of salt cod on top. Pour over the sauce and serve immediately.
