Atar Allecha (Spiced Green Pea Purée)

This recipe originates from the Sephardic Jewish population of Ethiopia, though it's not restricted to them.

Ingredients:

40g onions, chopped
2 garlic cloves, finely chopped
1 tbsp corn oil
75g split green peas, soaked over night, cooked until tender and drained
1/2 tsp ground turmeric
1/2 tsp salt
1 tsp Berbere spice
1 tbsp hot green chilli, finely chopped
250ml water

Method:

Mash the cooked split green peas to a purée then set aside. combine the onion and garlic in a dry pan over medium heat and stir fry for 2 minutes. Add the oil and fry for 1 minute more. Now add the mashed peas, turmeric, salt, Berbere spice and chilli.

Mix thoroughly to combine then stir in the water, bring to a simmer and cook for about 4 minutes further, or until the mixture is a thick, green, paste. Serve hot with injeera.
