Aromatic Lamb with Ginger and Potatoes: An Irish recipe for a stew of lamb cubes and potatoes in a spiced coconut milk base flavoured with ginger and chillies and finished with cashew nuts.

Ingredients:

1kg potatoes, cut into chunks
3 garlic cloves
4cm piece of fresh ginger
1.2kg lean lamb, cut into 5cm pieces
4 onions, finely chopped
3 tbsp oil
3 small, fresh, red chillies, chopped
seeds from 4 green cardamom pods, crushed
5cm piece of cinnamon stick
6 cloves
300ml water
150ml coconut milk
115g cashew nuts
salt, to taste

Method:

Crush the garlic and ginger in a mortar to form a paste. Add the lamb to a bowl and rub in the garlic and ginger paste. Cover and set aside to marinate for 2 hours.

Heat the oil in a large saucepan, add the onions and cook gently for about 5 minutes, or until soft and lightly browned. Stir in the chillies, cardamom seeds, cinnamon and cloves. Fry for 30 seconds, then add the meat.

Cover the pan and cook gently, stirring occasionally, until all the liquid has evaporated away.

Add the potatoes and the water then bring just to a boil. Reduce to a simmer and cook gently until the potatoes are almost tender, adding a little more water, as needed.

Stir in the coconut milk, cashew nuts and salt then bring back to a simmer and cook for 10 minutes more.

Serve hot.
