Arni Souvla (Skewered Lamb) is a traditional Cypriot recipe for a classic dish of marinated lamb threaded onto skewers that are cooked on a barbecue. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Skewered Lamb (Arni Souvla).

Ingredients
1.5kg boned leg of lamb
250ml dry white wine
250ml corn oil
2 celery sticks, finely chopped
2 bayleaves, halved lengthways
1 large tomato, finely chopped
120ml lemon juice
100g onions, finely chopped
1/2 tsp thyme
salt and freshly-ground black pepper, to taste
Method:
Cut the meat into 8 or 10 generous-sized pieces. Place in a large bowl then add the wine, oil, vegetables, herbs, lemon juice, onions and seasonings. Mix well, then set aside for 3 hours to marinate.
After this time, threat the meat onto large skewers then cook over charcoal on a barbecue, turning very frequently, until the meat is cooked through (about 60 minutes). Every 10 minutes brush the meat with the left-over marinade.
As soon as the souvla are cooked serve them. Traditionally they are served with potatoes baked in their skins on the barbecue (cook for about 30 minutes, turning frequently).
Serve accompanied by a salad made from onions, tomatoes and cucumbers.
