Ingredients:
2kg middle neck of lamb, cut into 3cm cubes
2kg potatoes, peeled and quartered
10 small onions, sliced
60g pearl barley
2 leeks, sliced into rings
1.2l Irish stock
4 tsp Worcestershire sauce
salt and freshly-ground black pepper, to taste
oil for frying
Method:
Add a little oil to a pan and use to brown the lamb in batches until nicely coloured. Add to a large saucepan or stockpot along with all the other ingredients. Bring to a boil then reduce to a simmer, cover and cook for about 90 minutes, or until the meat is very tender.
Adjust the seasonings then serve ladled into bowls. To make the stew go further you can also add carrots to the basic mix given above.
