Alitcha Birsen is a traditional Eritrean recipe for a classic stew of lentils cooked in a tomato-based sauce flavoured with garlic, ginger and chillies. The full recipe is presented here and I hope you enjoy this classic Eritrean version of: Alitcha Birsen.

Ingredients:
5 tbsp vegetable oil
6 garlic cloves, crushed
250g tomatoes, blanched and peeled
200g lentils
1 tsp salt
1 tsp black pepper
1 tsp ginger
2 fresh red chillies, finely chopped
1l boiling water
Method:
Heat the oil in a pan and fry the garlic until golden. Add the sliced tomatoes and simmer for 5 minutes before adding the washed lentils. Simmer for a few minutes then add the ginger, chilli and boiling water. Season with salt and pepper, cover the pan and simmer for an hour.
