Following my recipe for Air Fried Egg-stuffed Chestnut Mushrooms here is another mushroom-based twist on burger filling that’s cooked in an air fryer and served in a burger bun. I’m presenting a beef burger mix, a pork burger mix, a fish mix and a prawn mix. Use these to make or adapt your own filling.

Ingredients:

2 large open-cap chestnut (portobello) mushrooms
1 tsp melted butter

For the beef:
170g (6 oz) minced (ground) beef (lean is best)
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp ground black pepper

For the Pork:
170g (6oz) pork sausage, skinned

For the prawns:
170g (6 oz) prawns, finely chopped
generous pinch bicarbonate of soda
2 spring onions, finely chopped
¼ tsp smoked paprika
salt and freshly-ground black pepper to taste

For the Fish:
170g (6oz) white fish, minced
generous pinch bicarbonate of soda
2 spring onions, finely chopped
¼ tsp smoked paprika
salt and freshly-ground black pepper to taste

To serve:
Brioche buns
your choice of burger filling

Method:

Remove the stem from the chestnut mushrooms.

In a bowl, mix the minced beef with the salt, garlic powder, and black pepper until blended. Divide the mixture in half and form two round patties that will fit inside your mushrooms.
Pack the minced beef inside the mushroom.

Pre-heat your air fryer to 180°C (350F) for 3-5 minutes. Lightly spray the air-fryer basket with oil. Place the mushrooms in the basket and cook for 6 minutes. Open the basket and baste the tops and sides of the stuffed mushroom with butter.

Cook for an additional 6 minutes. If you wish to melt cheese on top, add a slice of cheese with one minute remaining (any longer and it might slide off the top).

Remove the stuffed mushrooms from the basket. Stuff in the buns and garnish with your desired toppings.

For any of the alternate patties (pork, prawns of fish) simply mix with the other ingredients, form two patties, use to stuff the mushrooms and cook as above.
