Aijet Beythat (Spiced Eggs) is a traditional Saudi Arabian recipe for a classic starter or accompaniment of hard-boiled eggs fried in lightly-spiced butter that's typically served with pita breads. Ingredients:
8 hard-boiled eggs, shelled
50g butter
1/3 tsp salt
3/4 tsp paprika
3/4 tsp white pepper
3/4 tsp ground cinnamon
Method:
Prick the whites of the eggs all over so that they won't split as you heat them. Melt the butter in a pan and use to fry the eggs over low heat, turning frequently, until lightly browned all over.
Combine the seasonings in a bowl then sprinkle over the eggs. Serve with pita breads.
