Ingredients:

120g butter
240g sugar
1 tsp vanilla extract
160g flour
120g ground acacia (or carob) seeds
1/2 tsp baking powder
100g chopped nuts (macadamias to be authentically Australian)
2 eggs

Method:

Cream the butter and sugar together until light and fluffy then add the vanilla extract and the beaten eggs a little at a time. Blend to a smooth paste then add the dry ingredients. Finally add the nuts and spread the mixture in a greased 22 x 22 cm baking pan.

Place in the centre of a pre-heated oven and bake at 180°C (350°F/Gas Mark 4) for about 25 minutes. Allow to cool then frost with icing sugar or a mix of icing sugar and cocoa.

Cut into bars and serve.
