Slete Soppes

Take white of Lek9 and ſlyt hem, and do hem to ſeeþ ī wyne, oile and ſalt, roſt brede and lay in dyſh9 and the ſewe above and sūe it forth.



Modern Redaction

Ingredients:

3 medium leeks
250ml white wine
olive oil
3 slices toasted bread cut into four triangles each
salt and pepper to taste

Method:

Remove the root bulb and the green part of the leeks. The original recipe calls for the leeks to be 'slit'. What I did was to halve each leak stem and then to cut it lengthways into strips. I also added some of the leek greens, as this gives a little colour contrast to the dish.

Heat the olive oil in a pan and add the leeks. Sautée the leeks until they soften, season with salt and pepper and add the wine. Simmer for about fifteen minutes until the stock reduces almost to nothing. Spoon the leeks over the bread and serve immediately.
