Mushroom Pie

CHAMPIGNONS d'une nuit sont les meilleurs, et sont petits et vermeils dedans, clos dessus: et les convient peler, puis laver en eaue chaude et pourboulir; qui en veult mettre en pasté, si y mette de l'uille, du frommage et de la pouldre.



Translation


Mushrooms of one night be the best and they be little and red within and closed at the top, and they must be peeled and then washed in hot water and parboiled and if you wish to put them in a pasty add oil, cheese and spice powder.

Modern Redaction


Ingredients:

455–680g Mushrooms, whole button or sliced
2 tbsp Olive oil
110g Cheese, grated
1/2 tsp Salt
1/2 tsp ginger
1/4 tsp black pepper
1 22cm Pastry case (lid optional)

Method:

Parboil or fry the mushrooms and drain. Add the oil, cheese and spices and mix thoroughly. Place in the pastry case (adding a lid if desired). Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 25 minutes, or until the pastry is golden brown.

Note: Use any combination of cheeses that suit your tastes,. but if you're looking for more 'authentic' cheeses then brie works well as does Mozzarella any Farmhouse cheese, such as cheddar or a goat's milk cheese.
