Ingredients:

450g French (fine) beans
150g bacon (chose lean bacon)
1 medium onion, finely chopped
30g butter
salt and freshly-ground black pepper, to taste

Method:

Top and tail the bans then bring a pan of salted water to a boil. Add the beans and cook for about 7 minutes, or until they have begun to soften. Drain the beans and place in a bowl of iced water (this helps them retain their colour and prevents them from becoming limp).

Slice the bacon into small pieces. Melt the butter in a pan, add the onion and fry over ow heat for about 6 minutes, or until the onions has softened (but has not coloured). Add the bacon, increase the heat, and fry until the bacon has crisped and the onion has coloured.

Now add the French beans to the pan and fry, shaking the pan constantly, until the beans have heated through. Season to taste with salt and black pepper.

Serve to accompany grilled meats.
