Yarmouth Biscuits

Ingredients:

350g plain flour
225g butter
25g caster sugar
3 eggs, beaten
225g currants

Method:

Sift the flour into a bowl. Dice the butter, add to the flour and rub in with your fingertips until the mixture resembles fine crumbs. Mix in the sugar then add the eggs and stir to combine. Finally, stir in the currants.

Drop the batter in rough heaps onto greased baking trays then transfer to an oven pre-heated to 190°C and bake for about 20 minutes, or until golden brown and cooked through.

Transfer to a wire rack to cool before serving or storing.
