Wok-smoked Mushrooms

This is an excellent way of flavouring firm mushrooms like boletes and chanterelles. This also works for puffballs.

Slice larger mushrooms but keep smaller ones whole.

Ingredients:

200g firm mushrooms like boletes, chanterelles and puffballs, sliced if larger
wood chips
loose-leaf tea

Method:

Make sure you do this in a well-ventilated room as it's going to smoke quite badly.

Place your wok over medium-high heat. Add a small layer of wood chips in the base. For a deper flavour place some loose-leaf tea over the wood chips.

Position a grill over the wood chips and arrange the whole or sliced mushrooms on the grill.

Cover everything with the wok lid then cook for about 15 minutes, or until the mushrooms are tender and tinged brown from the smoke.

You can serve the smoked mushrooms as they are. These are also great for drying and making into mushroom powder with extra smoky flavour.
