Wild Mushroom Pizza is a modern British recipe (based on an Italian original) for a classic pizza with a topping of wild mushrooms marinated in olive oil and thyme with a topping of grated cheese. This is a classic mushroom pizza which works particularly well with ceps or Agaricus (field mushrooms and allies) but which can also be prepared with a mix of wild mushrooms. Of course, you can also use cultivated mushrooms in this recipe (use a blend of button mushrooms and oyster mushrooms). The recipe is based around my perfect pizza dough recipe.
For the Topping:
1 tbsp olive oil
200g mixed wild mushrooms
salt and freshly-ground black pepper, to taste
fresh thyme leaves
cheese to grate over the top (use your favourite or a mix)
Method:
Pre-heat your oven to 200°C as you prepare the pizza dough.
For the topping, in a bowl mix together the olive oil, mushrooms, salt, black pepper and thyme leaves. Cover and set aside to marinate for 1–2 hours.
Once the dough has proved, divide into two pieces. Roll each one into a thin rectangle and place on lightly-oiled baking trays.
Spread the mushroom mixture over the pizza bases then sprinkle over the cheese.
Transfer to your pre-heated oven and bake for about 15 minutes, or until the cheese has melted and the dough is golden.
