Ingredients:

180g flour
1/2 tsp baking powder
1/2 tsp salt
1 egg
120ml milk
125g firm white fish cut into thick strips
oil for frying
lemon wedges

Method:

Mix the flour, baking powder and salt in a bowl. Add the egg and just enough milk to make a smooth batter.

Dip the pieces of fish in the batter and fry in a large pan until golden brown on both side. Drain on absorbent paper and serve with the lemon wedges.
