Whiskey Truffles are decadent and indulgent chocolate confections infused with the rich flavour of Irish whiskey. These boozy treats are perfect for whiskey lovers and make a delightful addition to any dessert table or a thoughtful home-made gift for Christma.
Ingredients:
about 225g milk or dark chocolate (or a blend), finely chopped
120ml double cream
2 tbsp Irish whiskey
2 tbsp unsalted butter, at room temperature
Cocoa powder, for rolling
Chocolate shavings or cocoa powder, for dusting (optional)
Method:
Begin by preparing a chocolate ganache: Place the finely-chopped chocolate in a heat-proof bowl.
Set a small saucepan over medium heat. Add the cream and heat until it starts to simmer. Immediately take off the heat.
Immediately pour the hot cream over the chopped chocolate and let it stand for a minute or two to soften the chocolate.
Gently stir the mixture until the chocolate has completely melted and the resultant ganache is smooth.
Stir the whiskey and the butter into the chocolate ganache, ensuring that everything is thoroughly combined. The mixture should be smooth and glossy with a subtle whiskey aroma.
Cover the bowl with clingfilm, making sure it touches the surface of the ganache to prevent a skin from forming. Transfer to your refrigerator and chill for at least 2 hours, or until the ganache becomes firm enough to handle.
Using a spoon or a small scoop, portion out small amounts of the chilled ganache and roll them into balls, about 3cm in diameter. As you roll each one transfer to a baking tray lined with greaseproof (waxed) paper.
You can leave the truffles as they are, or for an extra touch, roll them in cocoa powder, chocolate shavings, or even chopped nuts for added texture and flavour.
Once all the truffles are rolled and coated (if desired), return the baking sheet to the refrigerator and let them chill for an additional 30 minutes to set.
Once fully chilled and set, transfer the Irish Whiskey Truffles to an airtight container, separating layers with greaseproof paper to prevent sticking.
Keep the truffles refrigerated until you're ready to serve them. They will keep for up to 2 weeks in the refrigerator.
