West African Hot Chocolate is a traditional Ghanaian recipe for a classic hot chocolate drink made from a blend of milk, dark chocolate, honey, vanilla, cinnamon and rum. The full recipe is presented here and I hope you enjoy this classic Ghanaian version of: West African Hot Chocolate.

Variations of this hot chocolate drink can be found throughout West Africa, though this particular recipe comes from a Ghanaian friend of mine.
Ingredients:
500ml whole milk
100g good quality dark chocolate (at least 80% cocoa solids), chopped
2 tsp clear, runny, honey
1 tbsp brown sugar
1 tsp vanilla extract
1 cinnamon stick
1/2 cayenne chilli, split lengthways
75ml dark rum (optional, and add to your own taste)
Method:
Combine the milk and chocolate in a small saucepan then stir in the honey, sugar and cinnamon stick. Heat gently, stirring constantly, until the chocolate melts. Add the vanilla, chilli and rum and allow to come just to the scalding point (when little bubbles form all the way around the sides of the pan).
Remove the cinnamon stick and chilli half, pour into two mugs, adjust the sweetness to taste and serve.
