Walnut and Chocolate Chip Cookies is a traditional British recipe for a classic American-style cookie of a batter incorporating spices, coffee, raisins, chocolate chips and walnuts that's dropped onto a baking tray and oven baked until just done through. Ingredients:
440g brown sugar
160g butter
2 eggs
440g plain flour
1/2 tsp ground cloves
1 tsp ground cinnamon
2 tsp baking powder
1 tsp bicarbonate of soda
240ml brewed coffee
150g raisins
170g dark chocolate chips
120g chopped walnuts
Method:
Cream together the sugar and butter in a large bowl until soft and fluffy. Whisk the eggs lightly and add to the creamed butter a little at a time, mixing after each addition.
Sift the flour, cloves, cinnamon, baking soda and baking powder into a bowl. Stir to combine then add to the creamed mixture. Add the coffee and stir until well blended then add the raisins, nuts and chocolate chips.
Drop the mixture by the heaped tablespoon onto well-greased baling trays (leave at least 5cm between them) then place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 15 minutes, or until nicely browned. Allow to cool on the baking sheet for 10 minutes then transfer to a wire rack to cool completely.
